Erin E. Parkos, age 26, of Faribault, died unexpectedly on Monday, November 22, 2010 at her home. Mass of Christian Burial will be held on Saturday, November 27, 2010 at 10:30 a.m. at the Divine Mercy Catholic Church, 139 Mercy Dr., Faribault. Interment will be at the St. Lawrence Cemetery in Faribault. Visitation will be held at the Parker Kohl Funeral Home in Faribault on Friday from 3:00 to 8:00 p.m. and on Saturday for one hour prior to the services at the church. Erin Elizabeth Parkos, the daughter Howard and Mary (Foley) Parkos, was born on November 14, 1984 in Faribault. She graduated from Faribault High School with the class of 2003 and also from Mankato State University with a B.S. in Corrections and minor in Sociology. Erin enjoyed working with youth. She was involved with the Big Brothers Big Sisters program in high school and currently was working with Fernbrook Family Center in Owatonna. She also worked as a bartender at Grandpa Al''s in Faribault. Erin enjoyed playing volleyball, dancing, traveling and the outdoors. She was a people person, enjoying socializing and laughing with others, and could light up a room with her smile. She loved caring for her pets, her cat Lily, and dogs, Hector and Tanner. She is survived by her father, Howard (Diane) Parkos of Faribault; sister, Connie (Patrick) Rose of Owatonna; brothers, Mike (Becky) Parkos of Owatonna and Andy Parkos of Faribault; nephews and niece, Landon Parkos, Cody Parkos, and Katy Rose; paternal grandmother, Leila Parkos of Faribault; maternal grandparents, William and Ramona Foley of Alexandria; special friend, Ethan Eggert of Faribault; step- sisters, Cassandra Liverseed of Faribault, Sarah (Mike) Quernemoen of Faribault, Wendi Liverseed of Burnsville, and Mariah Breitung of Faribault; and many other relatives and friends. She was preceded in death by her mother, Mary in 1999; and grandfather, James Parkos in 1993. In lieu of flowers, memorials are preferred.
